My great teachers, Nonna (grandmother), my mother and of course my godmother taught me everything I know. Calabria has a rich tradition of Cucina Povera (cooking simply, with the best ingredients available). It refers to the traditional cooking techniques and recipes that originated from Italy's rural peasant populations. It also refers to the ingenuity of the poor italian cooks who made the best dishes with affordable and widely available ingredients. People all over Italy and the world travel to this beautiful southern region not only for the most stunning beaches but also for the best italian food.
Getting a recipe to include exact quantities of ingredients was almost impossible. It was in their blood, they just knew. I was fortunate to have been taught by these beautiful woman in my life and I look forward to sharing our recipes with you. I dedicate my restaurant to Nonna Rosa, Mamma Caterina and Zia Angela born and raised in Reggio Calabria.
